Shredded Chicken with Oyster Sauce

The shredded chicken with oyster sauce is one of China’s most exquisite recipes when it comes to royally cooking a simple chicken. The intense aroma of the oyster will fully complement the chicken in a tasteful dish easy to cook.

Considered to be a very special ingredient in the Chinese cuisine, chicken is one popular dish cooked in a wide range of possibilities. Originally domesticated in India, chicken has gained the status of the most common domestic animal. It can be cooked in numerous ways, including roasting it, frying it, grilling it; it is used in soups, and assorted with an ever wider range of ingredients.

On the other hand, oysters are a more special ingredient in dishes, as only some specific kind of oysters are used in cooking, and consumed either raw or cooked. An excellent source of many minerals and vitamins, oysters can be smoked, boiled, stewed, canned, roasted, fried, steamed or broiled.

There’s one legend that states that oysters work as an aphrodisiac, but one thing is certain: they are tasty, rich flavored and a great ingredient in many cuisines around the world. The oyster sauce takes all the compliments from the real oysters, and it’s a very famous sauce in the Khmer cuisine, in the Cantonese one, in the Thai cuisine and, of course, in the Chinese one.
This dark brown sauce is a key ingredient in the shredded chicken recipe described below.

In order to cook this amazing recipe, here are the necessary ingredients one needs:

Main Ingredients

  • 2 chicken thighs about 8 oz each
  • ½ oz agar agar
  • 1 oz toasted peanuts
  • 2 spring onions

  • Chicken marinade
  • 2 tbsp ginger juice
  • 2 tbsp wine
  • 1/3 tsp salt
  • 1 tsp sugar

  • Seasoning
  • ¼ cup stock
  • 3 tbsp oyster sauce
  • 1 tsp sugar
  • ¼ tsp pepper
  • 1 tsp sesame oil

  • The chicken thighs should be rinsed with boiling water and then pat dried with a towel. Create on each chicken thigh 3 slits lengthwise and place them on a platter. The marinade ingredients are to be mixed in a bowl, and then poured over the chicken thighs, on both sides.

    Leave aside to blend and to soak for about an hour, but make sure to turn the chicken thighs every 20 minutes. After the hour of marinating has expired, place them on a steamer and cook the meat for 10 minutes. When ready, remove from heat, wait until it’s cooled and then cut the flesh into thin strips.

    The agar agar needs to be washed in warm water and then dried just like the chicken thigh, in a clean towel. Cut the agar into 2 inches lengths and place them on a platter, then top with the chicken strips. In a saucepan, mix the seasoning ingredients until they boil and then pour over the chicken. Crush the peanuts and dice the onions and sprinkle them over the chicken. This dish is to be served cold.
