Pasta Milanese ingredients
Because people like different types of pasta, you can use your favorite pasta. Pasta “penne” is the recommended pasta type for this recipe, and it is the pasta that restaurants use in their menu. It is best to use high quality pasta in order for the pieces to have a well defined, strong definition even after boiling. Some pasta tends to ply and stick to each other, leaving a not so pleasant result visual wise.
The basic ingredients necessary for this recipe are:
The ingredients can be mixed together by taste and visual appreciation. For 1 pound package of pasta you can use 7 oz mushrooms, butter and ham, 1 pound of tomato sauce and 3 oz of pressed cheese. You don't have to be exact with the ingredients, you can put more of your favorite ingredient and less of your least favorite, but this is a well balanced recipe.
Preparing the pasta might sound a very easy thing to do and it is, but the way the pasta is boiled can make a big difference in the aspect of the food. Add water to a big pot sprinkling some salt and adding 1 tablespoon of olive oil to it. Take the water to a boil and add the pasta, stirring every once in a while. The pasta needs to boil at medium flame for about 7 minutes. You can check the boiling time by looking at the pasta's label and allow it to boil a little bit less because they will be thrown in the oven afterward. The pasta will still be a little bit hard when you will drain the water off of it, but that is exactly how the pasta should be. After the water has been drained apply a tablespoon f olive oil over them to prevent them from sticking to each other and place them back into the pot.
Cut the ham into thin slices, shred the pressed cheese and rinse well the sliced mushrooms. Cook the ham and the mushrooms in butter for a few minutes and apply the tomato sauce. Bring the sauce to a boil, add the cheese and pour it over the pasta. Sprinkle some fresh basil on top of each plate at serving.
If you have more patience and you like your pasta gratined you can put the pasta into a thermal resistant bowl, sprinkle some shredded pressed cheese over it and throw it into the preheated oven until the cheese turns goldish-brown.
Enjoy your pasta while it is still warm!
