Nicoise Salad Recipe

French cuisine has always managed to amaze us with the incredible combinations and flavors that mesmerized even the most exigent food critics. Classic French dishes are appreciated all over the world for their refinement and incredible tastes. One simple,quick and delicious traditional recipe that will definitely enchant your taste buds is Niçoise salad.

Niçoise salad is a traditional specialty that originates from Côte D'Azur and more specifically from the City of Nice and it was created almost 2 centuries ago. This salad is a perfect for everyone, even for those who are currently on a diet as it is a low calorie and low fat recipe. The number of calories depend on the type of specialty you choose but the classic Niçoise salad has about 285 calories per serving.

This beloved culinary creation has several versions that range from one region to another. This recipe only requires about 15 to 20 minutes of your time and it's fairly easy to make. The vinaigrette for this is also exceptionally easy to make: all you need to do is mix all the ingredients.

Ingredients for vinaigrette:

  • 1 clove of garlic miced
  • 1 teaspoon of Dijon mustard
  • a few teaspoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of fresh chopped parsley
  • ½ cup of lemon juice
  • Salt and black pepper to taste
  • Ingredients for Niçoise salad:

  • 4 free range eggs
  • 440 grams of red potatoes
  • 3 medium tomatoes
  • 60 grams of black olives
  • ½ cup of French green beans
  • 1 sweet pepper
  • 1 red onion (optional)
  • 2 cups of Romaine lettuce
  • 200 g of canned tuna fish
  • salt and pepper

  • Directions:

    Start by putting the potatoes in a large pot and add a dash of salt, cover the pot with a lid and leave for about 15 minutes. Put the eggs in a separate recipient and boil them for about 10 minutes. Meanwhile, put the green beans until tender (about 8 minutes), then rinse in cold water and let them drain. Make sure you trim the edges.

    Chop the onion and the sweet pepper and put them in a large skillet adding a few tablespoons of olive oil and a little vinaigrette sauce. Put the tuna in the skillet letting it sear for about 2 minutes on each side. Transfer the cooked tuna on a large plate. Peel and quarter the potatoes, slice the hard boiled eggs and chop the tomatoes. Mix the French green beans, the tomatoes, the egg slices, the olives and the tuna together in a large bowl and then add the vinaigrette sauce and you're done.
