Hot and Spicy Chinese Chicken

When cooking Chinese, one gets in touch with more than just an Asian taste, it gets in touch with a whole culture and philosophy behind it. This culinary experience involves all kind of ingredients, most of them now available everywhere: vegetables, pork meat, and chicken meat, and seafood, lots of spices, hot sauces and rice, cooked in a multitude of ways. Chicken is the most popular poultry in the Chinese cuisine and it can be the centre of many recipe and dishes: soups, stir-fried meals, deep-fry ones. Opposite to many other cultures, the Chinese cuisine uses almost everything there is in a chicken, including the neck, its heart or the skinned feet. It’s easy to say that the Chinese traditional way of cooking is one of the most creative cuisines out there.

So what it takes to make the most delicious Chinese hot and spicy chicken? Here are the necessary ingredients:

  • 4 tbsp of oil
  • 1 scallion
  • 2 to 3 hot peppers
  • 1 tbsp of shredded ginger
  • 1 tbsp of sherry
  • 2 tbsp of light soy sauce
  • 2 pound fryer
  • 1/2 cup of chicken broth
  • 1 tbsp of light soy sauce
  • 2 tbsp of wine vinegar
  • 1 tbsp of sugar
  • 1/2 tsp of salt
  • 1 tsp of anise pepper

  • This recipe is all about creaming the chicken meat with the multitude of sauces and fine Chinese flavors this recipe includes. first, cut the chicken into small pieces. Prepare a mixture of soy sauce, sherry and ginger and use it to marinate the small pieces of chicken. Keep it to marinate for 20 minutes. It’s now time to prepare the vegetables, so take the peppers and the scallions and chop them into 1 inch pieces, using a diagonal cut. Grind the anise pepper to powder and then mix the chicken broth, the sugar, the vinegar and the soy sauce, seasoning with salt and pepper.

    Take a frying pan and heat some oil in it; add the scallion and stir-fry it for 5 minutes, then add the soy mixture, the sherry, the ginger and the chicken pieces. Stir-fry all the ingredients for a couple of minutes, and then add the chicken broth mixture. Make sure all ingredients are well blended, so mix well. Keep the pan over a medium to low heat, until the chicken meat turns tender, and only then add the cornstarch, to thicken to composition.
