Hazelnut Chicken Mandarin Recipe

What could be more delicious than some chicken strips served with tasty oranges and crunchy hazelnuts? This Chinese hazelnut and mandarin chicken will surely impress even the harshest food critic, and will soon become one of your family’s favorite Asian dishes.

Combining such two different ingredients, like the mandarin oranges and the hazelnuts, with chicken might seem strange for some people, but they give this dish uniqueness in taste difficult to compare with anything else.

The mandarin oranges, primarily produced in China, followed by Spain and Brazil, are a popular ingredient not only in the Chinese cuisine, but also in alternative medicine, where its dried peels are used in the regulation of ch’i – the flow of energy which sustains our existence on the earth.

On the other side, this chicken recipe also includes hazelnuts, which apparently are used not only in cakes, chocolates and truffles, but in other dishes too.

Rich in proteins, thiamine, vitamin B6 and unsaturated fat, hazelnuts are also used sometimes as cooking oil, and are widely cultivated throughout Europe, Iran or Caucasus. Due to their nutritional properties, the hazelnuts are considered to be a unique element in our eating habits and in many food products, as they are an amazing source of energy, not only in the dry nuts category, but in the whole culinary area too.

Here are the necessary ingredients for this delicious Chinese dish, which serves 6:

  • 2 whole chicken breasts
  • 2 tbsp of oil
  • 1 large red pepper
  • 1/2 lb. mushrooms
  • 1 cup of sliced celery
  • 6 oz pea pods
  • 6 green onions
  • 3/4 cup of regular-strength chicken broth
  • 1/4 cup of honey
  • 2 tbsp of soy sauce
  • 1 tbsp of prepared mustard
  • 1 tbsp vinegar
  • 5 tsp cornstarch
  • 1 11-oz. can of mandarin oranges
  • 3/4 cup of hazelnuts

  • The chicken breast need to be skinned and boned, and all the vegetables (peppers, mushrooms, onions) need to be sliced.
    The mandarin oranges need to be drained before the actual cooking while the hazelnuts must be roasted and chopped.

    Fry the chicken breast in a skillet, with oil, until they turn brown. Add then the peppers, the celery, the mushrooms, the green onion and the pea pods, and cook them until they are tender, but crisp. When they reach this specific texture, pour in the chicken broth, which needs to me mixed with the soy sauce, honey, the mustard, the vinegar and the cornstarch. Cook all the ingredients until the sauce begins to thicken.

    Remove from heat and only after that add the oranges. Before serving, garnish with the roasted and chopped hazelnuts. Serve with rice.
