Gorgonzola Soup Recipe

The famous Italian blue cheese, also known as gorgonzola, is made of either cow or goat milk and has a history dating back to the Middle Ages. The gorgonzola cheese takes its name from an Italian small town, near Milan, where it’s supposedly produced since 879.   • 1 tbsp of olive oil
  • 1/2 cup of red bell pepper
  • 1 shallot
  • 8 ounces of Gorgonzola cheese
  • ½ cup of cream
  • 1 ½ cup of vegetable stock
  • 14.5 ounce can of diced tomatoes
  • 2 tsp of dried basil



  • The preparation steps in order to prepare this delicious Italian traditional soup are pretty simple. This Mediterranean recipe needs first heated oil in a soup pot. Place the soup pot over medium heat and, as soon as the oil is hot, add the shallot and the peppers, previously diced and minced. Cook them for 5 minutes, and don’t forget to stir, and wait until the vegetables turn soft.

    It’s now time to add the gorgonzola cheese, the cream and the vegetable stock. Wait until the cheese has melted and the whole mixture is simmering. Only then add the tomatoes, and make sure you include their natural liquid too. Season with some basil and let the soup simmer for another 15 to 20 minutes. One important thing is not to let the soup come to a boil, and don’t forget to stir in it constantly.
