Gazpacho Recipe

In authentic Spain cuisine, the Gazpacho recipe is one of the best examples of fusing refinement and tradition, also known as one of the best row vegetable soups based on tomatoes. This refreshing dish is the perfect ingredient in a hot Spanish summer day. Although there are various types of gazpacho, and although it has become almost a general term when it comes to chilled soups, gazpacho has a long history, dating back to ancient times. Believed to have an Arab origin, this Spanish specialty at first didn't appealed to the delicious taste of tomatoes, these were later on used as the method of preparation evolved, somewhere in the 15th century, when tomatoes were brought to Europe. Before that, the gazpacho included garlic, olive oil, vinegar, salt and stale bread. Today, after the great discovery of tomatoes, the soup has enlarged its range of ingredients, sometimes replacing tomatoes with watermelon, avocado, cucumber or seafood. Still, gazpacho is one of Spain’s famous delights and traditional food, so let’s see what a traditional gazpacho really means.

This recipe needs only half an hour preparation time, serves for 4 and it includes the following ingredients:

  • 10 oz. of bread
  • 21 oz. of tomato
  • 2 cloves of garlic
  • 2 onions, chopped
  • 2 red and green peppers
  • 1 cucumber (optional)
  • 7 tbsp of oil
  • 2 tbsp of vinegar
  • 1 1/2 tbsp of water
  • cumin (optional)

  • Use a big mortar in which you will mash the garlic, the cumin and the soaked bread. In another bowl, mix the onion with the vinegar, the chopped tomato, the oil and the salt. Mix it well, then add the contents previously mashed in the mortar. Pour the combination in a blender or appeal to a mixer to create the proper texture and quality of the soup. Preferably add cold water, and keep straining until it achieves the necessary quantity. Season with salt to taste. Before serving, this soup needs to be refrigerated. Finally add tomato, pepper, cucumber and toasted bread cut in squares to perk up the heavenly appearance and taste cavalcade of the Gazpacho.
