Easy Four Grain Bread

The four grain bread is just one of the many choices one has when it comes to baking bread. It has become so popular due to its key-elements included in the recipe, which make it not just the usual bread, but a highly nutrient one, with a pleasant taste and a beautiful soft texture.

Cooking your own bread has multiple benefits, starting with the liberty of choosing your favorite ingredients. The truth is that the bread is most likely the oldest prepared foods, its history going back in the Neolithic era! This more than popular food among all cultures has gained other values over time, due to the entire religious connotation given to it, political or cultural ones. The Christian religion, the wars, the political systems – they all have given the bread a certain transcendental connotation. But, most important, the bread is the major element on our everyday eating life.

The variety of ingredients used to bake bread is tremendous, the proof being all the kinds of bread available: white bread, brown bread, granary bread, wholemeal bread, the wheat germ bread, the rye bread. If one desires to complete the bread with other ingredients, the possibilities are endless.

Nowadays many kinds of bread contain nuts, various types of seeds, germs or spices. The various types of grains available on the market give the possibility to bake almost any kind of bread, just like the four-grain bread described below.
For one loaf of this four-grain bread, the ingredients are the following:

  • ½ cup of whole wheat bread flour

  • 2 cups of unbleached white flour

  • 1 active dry yeast (a package)

  • 1 cup of buttermilk

  • 2 tbsp honey

  • ¼ cup of rolled oats

  • ¼ cup of rye flour

  • ½ cup of masa harina (traditional flour in Mexican dishes)

  • ½ tsp salt

  • 2 tbsp safflower oil

  • The yeast, the buttermilk, the oil and the honey go together in a bowl – after mixing them, cover the bowl with a plastic wrap and wait for 10 minutes, until it grows and bubbles.

    The three flours and masa harina are to be mixed in another bowl, together with oats and the salt. After the yeast is ready to be used, pour it into the larger bowl containing the flours and mix with a spatula. When the mixture is getting harder and harder to handle with the spatula, you might consider using your hands to knead it into a rounded-ball shape.

    The dough is now ready to be put in an oiled bowl, and make sure you oil the dough’s surface too. Leave it covered with a plastic wrap for another 35-45 minutes, and meanwhile preheat the oven to 350F.

    When the waiting time is over, put the loaf-shaped dough in the oven and sprinkle it with water. You bake it for 35 minutes, and then you remove the bread from the pan, putting it directly on the oven rack. Remember to spray it again with water and bake it for another 5 minutes. Bon appétit!
