Cilantro Hummus with Crispy Garlic Pita

The cilantro hummus with crispy garlic pita gracefully combines the Middle Eastern aroma of hummus with the crispiness of the Mediterranean pita also inspired from Arabian cuisine.In only 15 minutes, one can prepare an incredibly delicious appetizer, easy so serve as a main meal too. This is one great appetizer recipe which absolutely needs to be tried at least once.


Hummus is a dip made from chick peas, originating from the Middle Easters culture, being one of the oldest prepared foods ever. Consumed in Palestine since 4000BC, hummus is also a popular item in the Mediterranean cuisine too, where it is usually served as an appetizer, a dip, or as a part of other dishes, like falafel, tortilla chips, or with meat.

Hummus has great nutritional values and it’s very rich in vitamin C, iron, vitamin B6 , dietary fiber and proteins. In fact, hummus is one favorite vegetarian and vegan ingredient, mostly combined with grains, or served with bread, being considered one complete protein meal.


Common to both Mediterranean and Arabic cuisines, just like the hummus, pita is a special round pocket bread, so famous in some cultures, that it’s been served with almost all fillings,garnishments and also main dishes. If in the Palestinian cuisine pita is a must-have with any kind of meal, in other countries, like in Bulgaria, pita is consumed only in special occasions, having an almost ritualistic and symbolic meaning. Pita is also popular in Turkey, Greece, and in Balkan countries like Bosnia & Herzegovina, Serbia, Macedonia, Yugoslavia or Croatia.

The cilantro hummus with crispy garlic pita recipe needs the following ingredients in order to serve 6:

  • 2 garlic cloves
  • 2 mild red chilies
  • large bunch cilantro
  • 2x15 oz cans chick peas
  • juice of 1 lime
  • 4 tbsp olive oil
  • salt and ground black pepper
  • 3 tbsp olive oil
  • 2 garlic cloves, crushed
  • 2 tbsp chopped fresh parsley
  • 4 white pita breads

  • Chop the cloves, the chilies, and the cilantro. Take a blender or a food processor and mix in it the cilantro, the chilies and the garlic, until they are well blended, then add the chick peas and mix some more. While still blending, squeeze in the lime juice and some olive oil, to reach a coarse paste. After seasoning it, spoon the mixture into serving bowls.

    In another bowl, mix the garlic, the olive oil and the parsley and season them. Take the pita breads and heat them on a side, using a broiler, until it gets a little brown. Take the bread out, turn over the bread and gently slash the softer side, but without cutting through the bread. Brush this softer surface with herb and oil mixture and put it back into the boiler, for about a minute. Set aside to cool before serving, then break the pita into small pieces and serve with the hummus mixture.
