Chorizo con Huevos Recipe

This Mexican recipe, also called spicy Mexican sausage and eggs, is one of Mexico’s most tasty recipes ever. It can be served in two ways, depending on one’s tastes, either as a nice tasteful breakfast, or with tortilla. No matter how you choose to taste it, the important thing is to try it. It's delicious!


The Chorizo is a Mexican sausage made of pork meat, often a smoked one, which can be either cooked or eaten without cooking, in both ways, being a delicious treat. This is a popular sausage among many traditional cuisines around the world.

In Spain, it is made from chopped pork, pork fat, paprika and salt. In Portugal, besides the Spanish ingredients, wine is also added, while, in North America, chorizo is based on the Spanish variant, but uncooked, and much spicier, due to the wide range of seasoning which are usually used in the process.

Mexican chorizo can be either dried or fresh, the last one being by far the most popular in this country. The famous colored spicy Mexican cuisine uses chorizo in all sort of traditional dishes, in tacos, burritos, tortas ( a sort of Mexican sandwich) or even as a pizza topping. Other countries in which chorizo are very popular is Philippines, India, Argentina, Colombia, Brazil or Uruguay.

This Mexican recipe also includes avocado, rich in vitamin B, E and K, with high fiber content (the richest among fruits). Avocado has become, over time, a popular ingredient in many recipes, being a great base for dips, the main ingredient in guacamole and California rolls, added to hamburgers and many other sandwiches, scrambled with eggs, served on toast, as breakfast, or served raw.

The chorizo and the avocado are just two of the amazing ingredients in this recipe, so here are all the necessary ingredients in order to prepare a traditional Mexican chorizo con huevos:

  • 2 tablespoon oil
  • 1 pound Mexican chorizo
  • 1 white onion, chopped
  • 2 Serrano chilies, seeded and chopped
  • 8 eggs
  • 1/2 bunch cilantro, leaves chopped)
  • 4 flour tortillas
  • 1 avocado, mashed
  • 1/2 cup fresh salsa

  • Take a large skillet, heat the oil in it and then fry the chorizo until it’s cooked. If you’re using a non-stick pan, the oil is optional, as it’s no longer necessary, or you can reduce its quantity to 2 teaspoons. After cooking the chorizo, drain off the remaining oil and add the onion. Wait for 2-3 minutes, and then add the Serrano chilies. Meanwhile, beat well the eggs and then pour them into the skillet, over the chorizo, the onion and the chilies, and use a spatula to stir in. Right at the end, add the cilantro.

    When served, use flour tortillas, some salsa and the fresh avocado which will definitely add some exotic aroma to this spicy, delightful Mexican dish. Another way of eating it is by warming the tortillas, topping it with the mixture of eggs, chorizo, onion and chilies; add the salsa and the previously mashed avocado, then roll it up and there it is – a perfect chorizo tortilla.
