Avocado Soup with Chicken and Lime

  • 4 (6 inch) corn tortillas, julienned
  • 1 1/2 tablespoons olive oil
  • 1 white onion
  • 8 cloves garlic
  • 4 fresh jalapeno peppers
  • 8 ounces skinless, boneless chicken breast halves
  • 1 quart chicken broth
  • 1/4 cup fresh lime juice
  • 1 tomato
  • salt and pepper
  • 1 avocado
  • 1/4 cup chopped fresh cilantro

  • Thinly slice the onion, as well as the garlic and the jalapeno peppers. The chicken breast must be cut into thin strips, the tomato needs to be seeded and diced, while the avocado needs its own preparation: peel it and dice it.
    Preheat the oven at 400F degreed, and put in it the tortilla strips, previously arranged in a baking sheet, for 4 or 5 minutes, until they reach a light brown color.

    Take a large saucepan and, over a medium heat, cook in it the jalapenos peppers, together with the garlic and the onion, for 5 minutes, until they reach a light brown color too. Add the chicken broth, the chicken strips, the sliced tomato and the lime juice, and season with salt and pepper. Simmer for 5 minutes, gently. Add the avocado and the cilantro.
    Serve in soup bowls with tortilla strips.
