Apple Cider Pie

The British West Country is famous for its cider production, no wonder that cider is an ingredient used in so many recipes. Inspiring years and years of culinary traditions, the cider, a beverage made from apple juice, can be the perfect ingredient for a pie: the apple cider pie.

With high concentrations of phenolics and antioxidants, the apple cider prevents heart diseases, ailments and even cancer. People in UK love it, hence the number of festivals dedicated to tasting, buying and celebrating the cider. One of the most popular drinks in United Kingdom, the cider is produces especially in the South West England, but also in other countries, like Argentina, Austria, Australia, Belgium and Canada. Still, it’s the United Kingdom that has the highest consumption of cider per capita, being its mother-country above all others.

The cider is used in lots of aperitifs, cocktails, to make vinegar, high in acid but very tasteful, and in culinary practices, like this cider pie.
In England’s West Country, cider is used to flavor both sweet and savory dishes, in most imaginative ways. In this special fruited pie recipe, cider has been used due to its subtle flavor with more than just a hint of apple. And when it comes to sweets and pies, United Kingdom has it all: biscuits, cakes, gingerbread, cheesecakes, and all kind of deserts, pies and puddings.

For 16 pieces or squares of this delicious pie, the following ingredients are necessary:

  • 150ml dry cider
  • 100g butter
  • 225g sultanas
  • 100g light soft brown sugar
  • 2 eggs
  • 225g plain flour
  • 1tsp of bicarbonate of soda

  • Before starting cooking the cider cake, the cider, together with the fruits, should be left overnight to soak in a bowl. For this recipe, one should grease a 7inch square cake tin.

    After the fruits have soaked into the cider, one needs to cream the sugar and the butter together, until they reach a fluffy texture and composition. Beat the two eggs and gently add them in, while gradually beating after each addition. Add now the flour and the bicarbonate of soda, while making sure that the composition remains smooth and homogeneous.

    Take the sultans and the cider and pour them into the mixture, stirring well, and then add the remaining flour. Pour it all into the already prepared greased tin, and then into the oven. This pie should be baked at 350F degrees, for about an hour, until well risen and firm to the touch.

    When ready, leave the pie to cool in the tin for half an hour, and then move it to a wire rack, where it is supposed to be left to cool completely. Before consuming the pie, cut it into squares.
