Almond Mushroom Pate Recipe

When it comes to gourmet cooking, nothing stands better than the idea of elaborated cuisine, refined tastes and tasteful ingredients. And since gourmet is actually a term used to describe food at its higher levels of quality, looks and culinary art, there’s one recipe needed to be known: the almond mushroom pate with cream cheese.

Pâté is one of France’s most beloved culinary creations, consisting of a mixture between ground meat and minced fat. The traditional pâté has spread all around the world, most countries having nowadays its own recipe.

The ingredients change from one geographic area to another – goose liver, poultry, fish, ham, pork, eggs, flour, mushrooms, cheese and vegetables. Vegetarian pâtés are also available, made from mushrooms, various types of beans or tofu. The vegetarian ones are even simpler to make, as they won’t involve actually cooking, but only a blender or a mixer.

What makes pâtés so special is the large variety of ingredients to be used, and also the additional item ready to enrich the taste. One can add spices, all kind of herbs, vegetables, and even wine. Even if France's pâté de foie gras is the ultimate culinary pâté and a true delight, this doesn’t necessary mean that all other fine mixtures and combinations aren’t themselves a moment of gourmet pleasure.

The almond mushroom pate with cream cheese is actually an appetizer , meaning it is served before the actual meal, mainly in order to stimulate one’s appetite while tasting something delicious. It takes just a few main ingredients to cook this tasteful appetizer, besides the mushrooms, the whole almonds and the cream cheese.

In order to prepare the almond mushroom pate with cream cheese, you’ll need the following ingredients:

  • 1 ½ cup sliced mushrooms
  • 2 tbsp cream cheese
  • 1 cup blanched whole almonds
  • 2 tbsp margarine
  • 1 small onion, which is to be chopped
  • 2 tsp soy sauce
  • 1 clove minced garlic
  • 1 tbsp lemon juice
  • ½ tsp tarragon
  • 1 dash of white pepper

  • Melt the margarine in a large bowl, then add the garlic, the onion and the mushrooms and saute the ingredients well enough, but do not brown them. Now add the tarragon and stir it until it’s softened. The next step when cooking the almond mushroom pate with cream cheese is to pour the previous mixture into a blender, together with the rest of the ingredients. The cheese is optional in this recipe, but it’s preferable, as it changes the pate’s consistency.

    The almond mushroom pate with cream cheese can be garnished with every herb or other ingredient preferred, chopped almonds, herbs, pepper strips etc. This pate gourmet can be served with crackers or bread.
